Ingredients:
1 tbspOlive oil
2 Garlic cloves, minced
1 largeOnion, chopped
1 cupCelery, sliced
3 cupTomato juice
1 cupChicken stock
1 tbspRed wine vinegar
4 largeTomatoes, chopped
1 Zucchini, sliced (optl)
1/4 cupFresh basil, chopped
2 tbspFresh parsley, chopped
2 tbspFresh oregano, chopped
1/4 tspPepper
Procedures:
1In a large saucepan, heat oil over medium heat; cook garlic, onion and celery for about 5 minutes or until tender.
2Add tomato juice, chicken stock and vinegar.
3Bring to boil; reduce heat and simmer gently for 10 minutes.
4Stir in tomatoes and zucchini; simmer for 5 minutes.
5Add basil, parsley, oregano and pepper; simmer for 2 minutes.
6Per serving: about 85 calories, 3 g protein, 3 g fat, 14 g carbohydrate
