Apple pie with port and cheddar cheese crust

Ingredients:
FILLING
1 1/2 cupSugar
1/4 cupCornstarch
2/3 cupApple juice
2/3 cupPort
2 tbspButter or margarine
1 Lemon (Grated peel only)
8 medCooking apples, peeled
- and sliced
CHEDDAR CHEESE CRUST
2 cupSifted flour
1 tspSalt
2/3 cupShortening
3/4 cupShredded sharp cheddar
5 tbspCold water (or more)
Procedures:
1Combine sugar and cornstarch in large saucepan.
2Stir in apple juice, port, butter and lemon peel.
3Cook over medium heat until mixture boils.
4Add apples and cook gently until barely tender.
5To make cheddar cheese crust, mix flour, salt and shortening with pastry blender until mixture resembles coarse meal.
6Stir in cheese.
7Add water gradually and mix lightly with fork to form dough.
8Divide pastry in halves and roll out one half to fit 9-inch pie pan.
9Roll second half of pastry and cut into 10 (?inch) strips.
10Spoon filling into pastry-lined pan.
11Weave pastry strips across filling to make lattice top.
12Bake at 375f 30 to 45 minutes, or until done.
