Ingredients:

| lbs | Button mushrooms (regular | | | Mushrooms you find at groc. | | | Store) | | 1/2
| med | Onion | | 3/4
| cup | Red wine | | 4
| slice | Whole wheat bread. | | | Salt, pepper. |

Procedures:
| 1 | Slice mushrooms and onions, sprinkle w/ salt and pepper. | | 2 | Preheat non-stick skillet until hot enough for onion to sizzle when touching surface. | | 3 | Add mushrooms, onion, and red wine. | | 4 | Cook on high heat, stirring frequently, until all liquid has evaporated. | | 5 | Meanwhile, toast bread. | | 6 | Serve as thick sandwiches. | | 7 | If desired, spread bread with stoneground mustard prior to making sandwiches (i usually don"t, but nice as a change) serves 2, or one really hungry person. | | 8 | Measurements are approximate. | | 9 | The number of sandwiches you make may depend on the size of your bread. |
