| large | Egg Yolks | | 3/4
| cup | Sugar | | 3
| oz | Lemon Juice | | | - about 2-?lemons | | 4
| tbsp | Butter | | | Pn Salt | | 2
| tsp | Lemon Zest | | | ORANGE GANACHE TOPPING | | 1
| oz | Bittersweet Chocolate | | | -Finely Chopped | | 2
| tbsp | Heavy Cream | | 1 1/2

Procedures:
| 1 | Heat oven to 325°F. | | 2 | Use 8x8" pan and line bottom and two sides with a 8x16" strip of foil. | | 3 | Whisk together the sugars and cocoa. | | 4 | In a large bowl, cream the butter and cocoa mixture until light and fluffy. | | 5 | Mix in the flour, adding in two parts, until incorporated. | | 6 | Pat dough into prepared pan. | | 7 | Use fork to prick dough all over. | | 8 | Bake for 40 minutes. | | 9 | While shortbread is baking, prepare the topping. |
