Deviled eggs a la jadi

Ingredients:
9 Hard-boiled eggs -- peel
Shell
3 Scallions -- finely chopped
12 ozCn tuna-drained and flaked
1 1/2 tspDry mustard
3/4 cupSoy sauce
1 tbspSesame or peanut oil
1 1/2 tspLemon juice
Salt and freshly ground
Black pepper
Paprika
Procedures:
1Slice eggs in half, lengthwise.
2Remove hardened yolks to a mixing bowl.
3Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste.
4Mix well.
5Fill egg white halves with tuna/egg yolk mixture.
6Sprinkle tops with paprika.
7Note: crab meat or abalone may be substituted for the tuna
