Milk-chocolate pan souffle'

Ingredients:
3 tbspButter
2 tbspSugar
2 tbspFlour
1 cupMilk
3 Egg yolks
5 ozMilk chocolate, fine chop
1 ozUnsweetened chocolate, chop
1 tspOrange peel
2 tspVanilla extract
4 Egg whites
1/4 tspCream of tartar
1 ozSemisweet chocolate, finechop
Procedures:
1Servings: 6
2souffle: preheat oven to 425 degrees.
3Generously grease 10" pie plate with 1 t of butter, sprinkle with sugar to coat dish.
4In medium saucepan, over medium-high heat, melt remaining 2 t butter.
5Whisk in flour until blended; cook 1 minute, or until bubbly.
6Remove from heat, whisk in milk until blended.
7Return to heat and cook , stirring, until mixture boils and thickens.
8Remove from heat.
9Whisk egg yolks and a little of the hot milk together until mixture is blended, then whisk into rest of milk mix.
10Return to low heat and cook, stirring, until mixture thickens, about one minute, do not boil.
11Remove from heat and stir in milk chocolate and unsweetened chocolate until melted.
12Stir in orange peel and vanilla.
13Cool 15 minutes, stirring occasionally.
14In large bowl, beat egg whites and cream of tartar until foamy, add 2 t sugar, beating until stiff.
15Fold together with cooled chocolate mixture.
16Pour into prepared pie plate.
17Bake 15 minutes or until souffle" has risen, edges are firm and center is still slightly wobbly.
18Sift confectioners sugar over souffle".
19serving: serve with orange ice milk.
20If desired, garnish with chocolate curls.
