Ingredients:

| tbsp | Flour | | 1
| cup | Milk | | 3
| | Egg yolks | | 5
| oz | Milk chocolate, fine chop | | 1
| oz | Unsweetened chocolate, chop | | 1
| tsp | Orange peel | | 2
| tsp | Vanilla extract | | 4
| | Egg whites | | 1/4
| tsp | Cream of tartar | | 1
| oz | Semisweet chocolate, finechop |

Procedures:
| 1 | Servings: 6 | | 2 | souffle: preheat oven to 425 degrees. | | 3 | Generously grease 10" pie plate with 1 t of butter, sprinkle with sugar to coat dish. | | 4 | In medium saucepan, over medium-high heat, melt remaining 2 t butter. | | 5 | Whisk in flour until blended; cook 1 minute, or until bubbly. | | 6 | Remove from heat, whisk in milk until blended. | | 7 | Return to heat and cook , stirring, until mixture boils and thickens. | | 8 | Remove from heat. | | 9 | Whisk egg yolks and a little of the hot milk together until mixture is blended, then whisk into rest of milk mix. | | 10 | Return to low heat and cook, stirring, until mixture thickens, about one minute, do not boil. | | 11 | Remove from heat and stir in milk chocolate and unsweetened chocolate until melted. | | 12 | Stir in orange peel and vanilla. | | 13 | Cool 15 minutes, stirring occasionally. | | 14 | In large bowl, beat egg whites and cream of tartar until foamy, add 2 t sugar, beating until stiff. | | 15 | Fold together with cooled chocolate mixture. | | 16 | Pour into prepared pie plate. | | 17 | Bake 15 minutes or until souffle" has risen, edges are firm and center is still slightly wobbly. | | 18 | Sift confectioners sugar over souffle". | | 19 | serving: serve with orange ice milk. | | 20 | If desired, garnish with chocolate curls. | | 21 | per serving: 311 calories, 7.8 g protein, 26 g carbohydrate, 21.4 g fat, (62%), 113 mg cholesterol, 129 mg sodium. |
