Old fashioned fudge

Ingredients:
2 cupSugar
2/3 cupMilk
1/2 tspSalt
2 tbspCorn syrup
2 ozUnsweetened chocolate OR
1/3 cupCocoa
1 tspVanilla
2 tbspButter
Procedures:
1Butter loaf pan.
2Combine sugar, milk, and cocoa( or chocolate), cornsyrup, and salt in 2 quart saucepan.
3Cook over medium heat, stirring constantly, until chocolate melts and sugar is dissolved.
4Cook, stirring occasioanlly, to 234°F( soft ball stage) remove from heat, add butter.
5Cool mix to lukewarm(120°F).
6Add vanilla, and beat vigorously and continuously 5 to 10 minutes with wooden spoon ( or mixmaster) mix will hold its shape when dropped from wooden spoon, shine will not be there.
7Quickly stir in nut( if desired), spread quickly and evenly in buttered pan.
8Cool until firm, cut into squares.makes one pound.
