Quatorze's chocolate praline mousse

Ingredients:
2/3 ozGood-quality semisweet
-chocolate
2 ozGood-quality unsweetened
-chocolate
2 cupHeavy or whipping cream
3 Eggs, separated
1/4 cupConfectioner's sugar
1/2 cupPraline paste
1/8 tspSalt
1/4 cupBrown creme de cacao
1 tbspUnsalted butter, melted &
-cooled to room temp
1 tbspBrewed espresso or very
-strong coffee, cooled
Procedures:

3Break both the chocolates into chunks and place them in the top of a double boiler over simmering water.
4Heat until melted, stirring occasionally.
5Set aside and cool to lukewarm.
6Whip the cream until it is stiff and doubled in volume.
7Set it aside.
8Beat the egg whites until they form soft peaks.
9Then add the confectioners" sugar 1 t. at a time, beating constantly until the whites are stiff but not dry.
10Set them aside.
11Combine the praline paste, salt, and creme de cacao in a large mixing bowl.
12Stir well, and add the egg yolks.
13Whisk until smooth.
14Add the melted butter, espresso and melted chocolate to the praline paste mixture, and blend thoroughly.
15Then, using a rubber spatula, fold in the whipped cream.
16Finally, very gently, fold in the egg whites.
17Spoon the mousse into individual bowls or a large serving bowl.
18Cover and refrigerate for 8 hours before serving.
