Ingredients:
1/4 lbsWhite chocolate
1/2 cupWater, boiling
1 cupButter
2 cupSugar
4 Egg yolks
1 tspVanilla
2 1/2 cupCake flour
1 tspBaking powder
1/4 tspSalt
1 cupButtermilk
4 Egg whites, beaten stiff
1 cupPecans, chopped
1 cupFlaked coconut
COCONUT FROSTING
2 cupSugar
1/2 cupWater
1/2 cupWhite Karo syrup
2 Egg whites, beaten frothy
Pn Salt
1 tspVanilla
2 cupFlaked coconut
Procedures:
1Melt chocolate in boiling water; cool.
2Cream together butter and sugar.
3Beat in egg yolks, one at a time, beating well after each addition.
4Add melted chocolate and vanilla.
5Sift together the flour, baking powder, and salt.
6Add to chocolate mixture, alternating with the buttermilk.
7Do not over beat.
8Fold in beaten egg whites, gently.
9Stir in nuts and coconut.
10Divid evenly into three generously greased and lightly floured cake pans.
11Bake in 350°F oven for 30-45 minutes..until lightly browned and center springs back at your touch.
12Cool, and frost with icing.
13Coconut frosting: cook sugar, water, and karo until it reaches soft ball stage.
14Pour syrup into egg whites and beat until stiff.
15Add salt and vanilla.
16Spread between layers and on top and sides of cake.
17Sprinkle icing with coconut as thickly as you like.
