Ingredients:
2 1/2 cupFlour, Unbleached, Sifted
1/4 cupCocoa, Baking
1 tspBaking Soda
1 tspSalt
1/2 cupButter Or Regular Margarine
1/2 cupVegetable Oil
1 3/4 cupSugar
2 largeEggs
1 tspVanilla Extract
1/2 cupButtermilk
2 cupZucchini, Unpeeled, Grated
6 ozSemi-Sweet Chocolate Chips
3/4 cupWalnuts, Chopped
Procedures:
1Sift together flour, cocoa, baking soda and salt; set aside.
2Cream together the butter, oil, and sugar in a mixing bowl until light and fluffy, using an electric mixer at medium speed.
3Beat in eggs, one at a time, beating well after each addition.
4Blend in vanilla extract.
5Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition.
6Stir in zucchini.
7Pour batter into a greased 13 x 9 x 2-inch baking pan.
8Sprinkle with chocolate chips and walnuts.
9Bake in a preheated 325°F oven for 55 minutes or until cake tests done.
10Cool in pan on rack.
11Cut into squares and serve.
