Ingredients:

| lbs | Chicken parts | | 1/2
| cup | Butter or other shortening | | 1
| each | Med. onion, chopped | | 1 1/2
| lbs | Tomatoes, peeled, strained OR | | 1
| tbsp | Tomato paste + 1 c. water | | | Water as needed | | 3
| cup | Raw rice (or less) | | 2 1/3
| cup | Water for each cup of rice |

Procedures:
| 1 | Wash & wipe chicken. | | 2 | Brown butter in lge. | | 3 | Pot; add chicken. | | 4 | Brown on all sides. | | 5 | Add onion and let it brown. | | 6 | Add tomatoes (or diluted paste) and the 1 cup of water. | | 7 | Cook abt. | | 8 | 20 min. add 2 1/3 c. water for each cup of rice you will use and continue to cook until chicken is tender (abt. | | 9 | 20 to 30 min).. | | 10 | Remove the chicken parts with a slotted spoon and keep them hot. | | 11 | Add rice to the sauce in the pot, stirring in the beginning to keep it from sticking. | | 12 | Simmer, covered, until rice is tender and has absorbed most of the sauce (abt. | | 13 | 20 min).. | | 14 | Remove from the heat. | | 15 | Place chicken on rice, cover the pot with a clean towel, put the lid back over the towel. | | 16 | Let stand for 10 min., then serve. |
