Ingredients:
3 lbsChicken parts
Salt and pepper
1/4 tspGround ginger
1 Clove garlic -- minced
1 cupChicken broth
8 1/2 ozCan pineapple slices
4 ozCan water chestnuts --
Drained and sliced
4 eachGreen onions -- diagonally
Sliced
1/4 cupCornstarch
1/4 cupSoy sauce
1 tbspVinegar
Procedures:
1Sprinkle chicken with salt and pepper.
2Place in slow-cooking pot.
3Combine ginger, garlic, broth and syrup from pineapple.
4Cut pineapple slices into fourths.
5Arrange pineapple and water chestnuts over chicken.
6Pour ginger sauce over all.
7Cover and cook on low for 3 to 4 hours or until chicken is tender.
8Add green onions.
9Dissolve cornstarch in soy sauce and vinegar.
10Stir into pot.
11Cover and cook on high for 10 to 15 minutes or until slightly thickened.
12Serve with crisp chinese noodles
