Ingredients:
2 Cloves garlic -- minced
6 ozBoneless skinless chicken
Breasts
1/2 cupGreen peas -- frozen/thawed
1/3 cupCarrot -- shredded
1/2 cupChicken broth
2 tbspFat-free cream cheese
2 cupPasta
3 tbspParmesan cheese -- grated
1/2 tspLemon peel -- grated
1/8 tspSalt
1/8 tspBlack pepper
Procedures:
1Prepare a skillet with cooking spray.
2Place over medium-high heat until hot.
3Add garlic, chicken, peas, and carrot; sautae until tender.
4Remove from skillet; set aside.
5Add broth and cream cheese to skillet; cook over medium-high heat 3 minutes or until cheese melts, stirring constantly with a whisk.
6Stir in chicken mixture, pasta, parmesan cheese, lemon peel, salt, and pepper; cook 1 minute.
