Ingredients:

| cup | Oil | | 2
| | Chicken breasts | | 1
| tbsp | Sherry | | 1
| tbsp | Light soy sauce | | 1
| tbsp | Corn starch | | 1
| can | (8-oz.) bamboo shoots, diced | | 2
| tbsp | Hoison sauce | | 1/2
| tsp | Crushed red-hot pepper | | 1
| tbsp | Chopped scallion | | 1
| tsp | Chopped ginger |

Procedures:
| 1 | Bone chicken and cube it. | | 2 | Mix sherry, soy sauce and corn starch. | | 3 | Marinate chicken in cornstarch mixture for 15 minutes. | | 4 | heat oil. | | 5 | Add chicken cornstarch mixture and stir-fry for 2 minutes. | | 6 | Remove chicken. | | 7 | Add bamboo shoots, hoison sauce, scallion, ginger and crushed red peppers. | | 8 | Stir well, then add chicken and serve. |
