Ingredients:
STEP ONE
2 Chicken breasts, *
Salt & Pepper to taste
STEP TWO
1 Ripe banana, medium/mashed
1/3 cupOrange curacao OR
1/3 cupGrand Marnier
1 1/2 tspLemon juice
1/4 cupDark corn syrup
1/4 tspSalt
STEP THREE
1/4 cupButter
1/4 cupChopped walnuts
2 tbspRaisins
1/8 tspSalt
1/8 tspPepper
1/2 cupSoft bread crumbs
STEP FOUR
1/2 Banana, sliced
Procedures:
1* skinned, and boned cover chicken breasts with wax paper and flatten breasts with mallet.
2Season inside and out with salt and pepper.
3Mix all ingredients together in part two and set aside.
4Melt butter.
5Add remaining ingredients in part three and toss to blend.
6Stuff chicken breasts with mixture and place in au gratin dishes.
7Pour half of banana mixture over chicken and bake at 350^ for 25 to 30 minutes, basting once.
8Top breasts with sliced bananas and spoon sauce over.
9Return to oven for 2 to 3 minutes and serve.
