Ingredients:
1/2 cupGreen bell pepper
1/2 cupRed bell pepper
1/2 cupYellow bell pepper
1/2 cupMushrooms, quartered
1/2 cupYellow onion
4 Garlic cloves, minced
4 Chicken breasts
-- (skinless and boneless)
2 tbspOlive oil
1/4 tspCoarse black pepper
1/2 tbspSalt substitute
10 ozCalifornia dried figs
-- in bite-sized pieces
1 tbspFresh parsley, chopped
1 tbspFresh basil, chopped
1/2 cupWhite wine
Procedures:
1Clean and slice vegetables.
2Cut chicken into strips 2" x ?.
3Stir-fry chicken strips in olive oil in heavy saucepan over medium heat for 3 minutes.
4Add all vegetables and seasonings, except figs, parsley, and basil.
5Continue to cook for 15 minutes.
6Add figs, parsley, and basil and mix well.
7Add wine and continue to cook for another 2 minutes.
8Serve with your favorite green salad and whole grain rice.
