Ingredients:
1 cupTomato puree
1 cupPlain yogurt
2 tbspGreen chiles, canned/finely
1/2 tspChili powder
1/2 tspCoriander, ground
2 cupGarlic, minced
1 tspOnion powder
12 Tortillas
4 cupChicken, cooked or turkey
1 cupSapsago cheese, grated
Procedures:
1Next time you are invited to a pot luck dinner impress your friends with this attractive yet economical casserole.
2Mix together puree, yogurt, green chiles, chili powder, coriander, garlic and onion powder.
3Place tortillas on a rack in a 350°F oven.
4Heat until crisp about 5 to 7 minutes.
5Arrange tortillas in a shallow baking dish.
6Layer chicken and sauce over tortillas.
7Bake in 350°F oven for 25-30 minutes.
8Serve hot.
9Garnish with grated sapsago cheese, if desired.
10This casserole may be frozen before baking.
