Ingredients:
8 Chicken breast halves
-skinned and boned
7 ozGreen chilies, diced
4 ozMonterey Jack cheese, cut
-into 8 strips
2/3 cupFinely ground dry bread
-crumbs
1/2 cupParmesan cheese, grated
1 1/2 tbspChili powder
1/2 tspSalt
1/2 tspGround cumin
1/4 tspPepper
6 tbspButter, melted

TOMATO SAUCE
32 ozTomato sauce
1/2 tspGround cumin
1/3 cupGreen onions, sliced
Salt and pepper to taste
Hot pepper sauce to taste
Procedures:
1Flatten chicken breasts between waxed paper.
2Put about 2 tablespoons chilies and 1 cheese strip in center of each chicken piece.
3Roll up and tuck ends under.
4Combine remaining ingredients, except butter, to make crumb mixture.
5Dip each stuffed chicken to shallow bowl containing melted butter and roll in crumb mixture.
6Place chicken rolls seam side down in oblong baking dish.
7Cover and chill 4 hours or overnight.
8Preheat oven to 400 degrees.
9Bake uncovered for 20 minutes or until done.
10Prepare tomato sauce: combine all ingredients in a pan and heat well.
11Pour heated tomato sauce over chicken
