Minced chicken with lettuce

Ingredients:
8 Dried mushrooms
1 tspCornstarch
2 tspDry sherry
2 tspWater
Salt and pepper
1 1/2 lbsBoneless skinless chicken br
5 tbspOil
1 tspFresh ginger, minced
2 Cl Garlic, minced
2 Green onions, minced
2 smallDried chiles, (optional)
8 ozCanned bamboo shoots, minced
8 ozCanned water chestnuts, minc
COOKING SAUCE
1 tbspSoy sauce
1 tbspDry sherry
2 tbspOyster sauce
2 tbspWater
1 tspSesame oil
1 tspSugar
2 tspCornstarch
Procedures:

2Cut off and discard woody stems.
3Mince; set aside.
4Combine cornstarch, sherry, water, soy, salt, pepper and chicken.
5Stir to coat chicken thoroughly.
6Stir in 1 teaspoon oil and let sit 15 minutes.
7Heat wok over high heat.
8Add 3 tablespoons oil, add chicken and stir-fry 3 minutes.
9Set aside.
10Add 2 tablespoons oil to pan.
11Add ginger, garlic, chiles and onion; stir-fry 30 seconds.
12Add mushrooms, bamboo shoots and water chestnuts; stir-fry 2 minutes.
13Return chicken to pan; stir in cooking sauce.
14Cook until thickened and hot.
15To eat, spread a little hoisin sauce on a lettuce leaf, spoon in some chicken, then wrap up in lettuce.
