Ingredients:
1/2 lbsBoned chicken breast
12 Snow peas
1/2 cupButton mushrooms
1/2 lbsChinese cabbage (bok choy)
4 Water chestnuts
2 tbspPeanut oil
3/4 tspSalt
1/4 cupSliced bamboo shoots
1/4 cupWater
1 tspCornstarch mixed with 3 Tbl.
1 dashPepper
1/4 tspSugar
Procedures:
1Poach the chicken for 20 minutes, allow it to cool and slice into pieces 1/8 x 1 ?x String the snow peas.
2Slice the mushrooms, cabbage and water chestnuts thinly.
3Heat a skillet or wok, then add the peanut oil and salt.
4Just before the oil begins to smoke, add all the vegetables and stir-fry for ?minute.
5Add the water, cover and cook for 2 minutes.
6Add the chicken, cornstarch mixture, pepper and sugar.
7Stir until the sauce is thickened.
