Ingredients:
1 lbsGreen beans, trimmed
1 Butternut squash
4 tbspButter, unsalted
1 Garlic clove, chopped
1/4 cupCurrant jelly
1/4 cupBasil leaves, chopped
1/4 cupParsley leaves, chopped
3/4 tspSalt
1/4 tspBlack pepper
1 tbspLemon juice
1/2 cupWalnuts, toasted, chopped
Procedures:
1Peel and seed butternut squash, and cut into 2x½x? sticks.
2Cook green beans in 2" boiling water in large skillet or dutch oven for 6 minutes.
3Add squash; cook 6-8 minutes or just until tender when pierced with fork.
4Drain; rinse with cold running water.
5(can be done up to 1 day ahead and refrigerated.
6Heat buuter in same pan over medium heat.
7Add galic; saute 2 minutes.stir in jelly, basil, parsley, salt and pepper, stirring until jelly is melted.
8Add beans and squash; heat through.
9Remove from heat.
10Stir in lemon juice.
11Spoon onto serving platter.
12Sprinkle with walnuts.
13Serve hot or warm.
