MARINADE
1 cupOlive oil
4 Garlic cloves, minced
1 tspRed pepper flakes, crushed
1 tbspFresh parsley, chopped
1 tbspFresh cilantro or basil

1/2 tspSalt
1/4 tspFreshly ground pepper
COLD TOMATO DRESSING
3 Tomatoes, peeled, seeded
-- and chopped
3 Shallots, minced
1/4 cupSherry wine vinegar
1/4 cupTomato juice
1/4 cupExtra virgin olive oil
1 Lime, juiced
2 tbspChopped fresh parsley
2 tbspChopped fresh cilantro
