Ingredients:
1 lbsGround turkey
2 cupAll-purpose flour
2 tspBaking powder
1/2 tspBaking soda
1/4 cupMargarine or butter
1/2 cupTo ?c skim milk
6 ozCan tomato paste
1 tspOregano leaves, dried
1/2 tspBasil leaves, dried
1/2 tspSalt
1/2 cupGreen bell pepper, chopped
1/2 cupSliced fresh mushrooms
1/4 lbsMozzarella cheese, grate 1cup
Procedures:
1Suggestion: for 2 servings, use a small aluminum foil pan about 4 x 8 inches or press a sheet of aluminum foil into a loaf pan and set the foil pan on a cookie sheet.
2Measure half the other ingredients and freeze the remaining 3 ounces of tomato paste for a future meal.
3Preheat the oven to 425°F.
4Cook the ground turkey in a large nonstick skillet over medium heat until cooked through.
5Stir occasionally.
6Combine flour, baking powder, and margarine in a bowl.
7Cut the margarine into the flour with a fork until the mixture resembles coarse meal.
8Add enough milk to make a soft, elastic dough (like biscuit dough).
9Press the dough into the sides and bottom of an 8-inch square baking pan.
10Combine the tomato paste and seasonings and spread over the dough.
11Crumble the ground turkey over the sauce.
12Sprinkle on the green pepper, mushrooms and cheese.
13Bake for 20 to 25 minutes or until the crust is brown and crisp.
14Cut into four squares to serve.
