Ingredients:
1/4 cupButter or margarine
1 lbsIdaho Potatoes, peeled
-grated and squeezed dry
1 largeOnion, diced
1 medRed or green bell pepper
-seeded and diced
1/2 tspSalt
1/8 tspFreshly ground black
-pepper
Procedures:
1In a 1 2-inch skillet over medium-high heat, melt the butter.
2Add idaho potatoes, onion, and bell pepper and cook about 8 to 10 minutes, gently stirring the mixture every few minutes.
3Add the salt and pepper: cook until the potatoes are well browned on both sides and tender.
