Ingredients:

| lbs | CARROTS | | | 1 ea LIGHTLY SALTED WATER | | 2 1/2
| tbsp | MARGARINE | | 1/3
| cup | HONEY | | 1/2
| tsp | POWDERED GINGER | | | 1 ea ORANGE ZEST AND JUICE | | | 1 ea SALT TO TASTE | | | 1 ea PARSLEY FOR GARNISH |

Procedures:
| 1 | Trim and peel carrots. | | 2 | Cut into thin rounds. | | 3 | Simmer in enough salted water to cover until tender. | | 4 | Drain and return to low heat and add margarine, stirring to melt. | | 5 | Combine honey, juice, ginger and zest and add to pan. | | 6 | Increase heat so that glaze will reduce, stirring often. | | 7 | Dust each serving with parsley or mint if desired. | | 8 | Makes 4 servings. |
