Honey glazed carrots

Ingredients:
1 lbsCARROTS
1 ea LIGHTLY SALTED WATER
2 1/2 tbspMARGARINE
1/3 cupHONEY
1/2 tspPOWDERED GINGER
1 ea ORANGE ZEST AND JUICE
1 ea SALT TO TASTE
1 ea PARSLEY FOR GARNISH
Procedures:
1Trim and peel carrots.
2Cut into thin rounds.
3Simmer in enough salted water to cover until tender.
4Drain and return to low heat and add margarine, stirring to melt.
5Combine honey, juice, ginger and zest and add to pan.
6Increase heat so that glaze will reduce, stirring often.
7Dust each serving with parsley or mint if desired.
