Horn and hardart's baked beans

Ingredients:
1 lbsGreat Northern or Navy beans
-water
4 sliceBacon, diced
1 tbspDry mustard
2/3 cupMolasses
1 1/2 cupTomato juice
-soaked overnight in cold
1 cupOnion, chopped
2 tbspSugar
1/2 tspCayenne pepper
2 tbspCider vinegar
Salt
Procedures:
1Drain the beans and place them in a large saucepan.
2Add fresh water to cover the beans.
3Bring the water to a boil over medium heat.
4Reduce heat and simmer uncovered, until beans are almost tender, about 45 minutes to an hour.
5Drain.
6Preheat oven to 250 degrees.
7Place the beans in a baking pot or casserole.
8Stir in the onions, bacon, sugar, dry mustard, cayenne, molasses, vinegar, tomato juice, and 1 cup water.
9Bake the beans uncovered until very tender, about 4 hours.
10Check the beans occasionallu while baking and add more water if necessary, to prevent the mixture from drying.
11Season with salt to taste.
