Ingredients:
1 tbspSafflower Oil
2 tbspChopped Onion
Clove garlic, minced
1/4 cupMinced fresh parsley
1 tspBasil
1/4 tspGround Coriander
1/4 tspOregano
1/4 tspBlack pepper
15 ozCan drained Chick Peas
3 tbspLemon juice
2 tbspToasted Sesame seeds
1 dashCumin
Procedures:
1Garnish: lemon wedges, cherry tomatoes, or fresh parsley sprigs (opt) in a small skillet, heat oil; saute onion and garlic until onion is softened.
2Add seasonings.
3Stir just long enough to soften parsley.
4In food processor, combine rinsed and drained chick peas and lemon juice; process until smooth.
5Stir in onion and herb mixture; stir in sesame seeds.
6Spoon into serving bowl.
7Top with garnish if desired.
8Makes 1 ?cups variations: - substitute 15-oz can great northern beans for chick peas.
