| large | Artichokes (about 3 lbs) | | 4
| cup | Fresh bread crumbs* | | 3/4
| cup | Italian dressing | | 1/4
| cup | Chopped onion | | 2
| tbsp | Grated Parmesan | | 2
| tbsp | Chopped fresh parsley | | 2

Procedures:
| 1 | Wash artichokes in cold water: drain cut stem close to base. | | 2 | Cut 1" off top remove tough lower leaves and discolored leaves if desired, cut off sharp leaf tips wit scissors. | | 3 | Brush cut edges w/ lemon juice. | | 4 | Prepare artichokes for cooking as directed; set aside. | | 5 | In medium bowl, combine bread crumbs,dressing, ?cup onion,cheese and parsley. | | 6 | Stuff mixture between artichoke leaves. | | 7 | In large, nonaluminum saucepan, bring broth and remaining onion onion to boil. | | 8 | Add artichokes and simmer covered,basting occasionally,40 mins or until leaves are tender and pull out easily makes 4 servings * for best flavor and texture, make bread crumbs using italian or french bread |
