Ingredients:
4 largeArtichokes (about 3 lbs)
4 cupFresh bread crumbs*
3/4 cupItalian dressing
1/4 cupChopped onion
2 tbspGrated Parmesan
2 tbspChopped fresh parsley
2 cupChicken broth
HOW TO PREPARE ARTICHOKES F
Procedures:
1Wash artichokes in cold water: drain cut stem close to base.
2Cut 1" off top remove tough lower leaves and discolored leaves if desired, cut off sharp leaf tips wit scissors.
3Brush cut edges w/ lemon juice.
4Prepare artichokes for cooking as directed; set aside.
5In medium bowl, combine bread crumbs,dressing, ?cup onion,cheese and parsley.
6Stuff mixture between artichoke leaves.
7In large, nonaluminum saucepan, bring broth and remaining onion onion to boil.
8Add artichokes and simmer covered,basting occasionally,40 mins or until leaves are tender and pull out easily makes 4 servings * for best flavor and texture, make bread crumbs using italian or french bread
