| 1 | Wash the collard greens in several changes of water. |
| 2 | Remove the stems. |
| 3 | Stack the greens a few at a time and cut crosswise into ?inch wide strips. |
| 4 | Bring a large pot of water to the boil, add the collard greens and cook 10 minutes. |
| 5 | Drain and rinse with cold water. |
| 6 | Squeeze out the excess moisture. |
| 7 | Heat the oil in a large skillet. |
| 8 | Add the onion and jalapeno; saute 5 minutes. |
| 9 | Add the tomatoes and cook 1 minute. |
| 10 | Stir in the greens, salt and pepper. |
| 11 | Cook 5 minutes. |
| 12 | Stir in the lemon juice and cook 1 minute. |
| 13 | Serve. |
