Ingredients:
15 ozBlack Beans, Rinsed And
-Drained, 1 Can
4 1/4 ozRipe Olives, Chopped
-Drained, 1 Can
1 smallOnion, Finely Chopped
1 medGarlic Clove, Finely Chopped
2 tbspVegetable Oil
2 tbspLime Juice
1/4 tspSalt
1/4 tspRed Pepper, Crushed
1/4 tspCumin, Ground
1/8 tspPepper
8 ozCream Cheese, Softened, 1
-Pkg
2 largeEggs, Hard Boiled, Peeled
-And Chopped
1 largeGreen Onion, Sliced
15 ozTortilla Chips, 1 Pkg
Procedures:
1Mix the beans, olives, onion, garlic, oil, lime juice, salt, red pepper, cumin and pepper, blending well.
2Cover and refrigerate for 2 hours.
3Spread the cream cheese on the bottom of a serving plate.
4Spoon the bean mixture evenly over the cream cheese.
5Arrange the eggs on the bean mixture in a ring around the edge of the plate, then sprinkle with the onion.
6Serve with the tortilla chips.
