Live-well: coleslaw for supper and subs

Ingredients:
4 cupCabbage, shredded
1 smallCarrot, grated
1 smallOnion, chopped
1/4 cupCelery, sliced
1/4 cupLow-fat plain yogurt
2 tbspLight mayonnaise
4 tspWhite vinegar
1 tspDijon mustard
1/2 tspGranulated sugar
1 pinchSalt
1 pinchPepper
Procedures:
1In bowl, toss together cabbage, carrot, onion and celery.
2In small bowl, stir together yogurt, mayonnaise, vinegar, mustard, sugar, salt and pepper.
3Stir into cabbage mixture; toss well.
4[coleslaw can be refrigerated in airtight container for up to 2 days] variation: add chopped sweet pepper, small broccoli florets or any other vegetables you have on hand.
