Ingredients:
1 tbspButter
7 medSweet onions, coarsely
.chopped (about 7 cups)
1/2 cupSelf-rising flour
1/2 tspSalt
1/4 tspPepper
1 1/4 cup(5 oz) shredded Cheddar
.cheese, divided
1 1/4 cup(5 oz) Monterrey Jack cheese
.shredded and divided
1 tbspChopped bottled or canned
.jalapeno peppers, drained
Procedures:
1Preheat oven to 350°F.
2In a large skillet, melt the butter over medium heat.
3Add the onions and saute for about 10 minutes, until softened.
4Meanwhile.
5In a medium sized bowl, combine the flour, salt, and pepper.
6Add 1 cup of each cheese; mix well.
7Add the jalapeno peppers and the cooked onions; mix well.
8Pour into a 1 ?quart casserole dish that has been coated with nonstick spray.
9Combine the remaining cheeses and sprinkle evenly over the onion mixture.
10Bake for 30 minutes or until the cheese is melted and bubbly.
11note: if you are serving this right from the casserole dish on the kitchen table or dining room table, be sure to use a trivet.
