Ingredients:

| med | Sweet onions, coarsely | | | .chopped (about 7 cups) | | 1/2
| cup | Self-rising flour | | 1/2
| tsp | Salt | | 1/4
| tsp | Pepper | | 1 1/4
| cup | (5 oz) shredded Cheddar | | | .cheese, divided | | 1 1/4
| cup | (5 oz) Monterrey Jack cheese | | | .shredded and divided | | 1
| tbsp | Chopped bottled or canned | | | .jalapeno peppers, drained |

Procedures:
| 1 | Preheat oven to 350°F. | | 2 | In a large skillet, melt the butter over medium heat. | | 3 | Add the onions and saute for about 10 minutes, until softened. | | 4 | Meanwhile. | | 5 | In a medium sized bowl, combine the flour, salt, and pepper. | | 6 | Add 1 cup of each cheese; mix well. | | 7 | Add the jalapeno peppers and the cooked onions; mix well. | | 8 | Pour into a 1 ?quart casserole dish that has been coated with nonstick spray. | | 9 | Combine the remaining cheeses and sprinkle evenly over the onion mixture. | | 10 | Bake for 30 minutes or until the cheese is melted and bubbly. | | 11 | note: if you are serving this right from the casserole dish on the kitchen table or dining room table, be sure to use a trivet. |
