Ingredients:

| lbs | Russet potatoes (cooked) | | 1/2
| cup | Vegetable stock | | | 1 bn Scallions (chopped) | | | Pepper to taste | | 2
| tsp | Italian seasoning | | | Paprika |

Procedures:
| 1 | Dice cooked potatoes. | | 2 | Place in 8 x 11 baking dish. | | 3 | Sprinkle with scallions, italian seasoning and pepper. | | 4 | Mix gently with fork. | | 5 | Pour vegetable stock over potatoes. | | 6 | Sprinkle with paprika. | | 7 | Bake at 400 degrees on upper shelf. | | 8 | Stir every 15 minutes until nicely browned and crisp, about 45 minutes. | | 9 | Place under broiler to complete browning |
