Ingredients:
2 lbsRusset potatoes (cooked)
1/2 cupVegetable stock
1 bn Scallions (chopped)
Pepper to taste
2 tspItalian seasoning
Paprika
Procedures:
1Dice cooked potatoes.
2Place in 8 x 11 baking dish.
3Sprinkle with scallions, italian seasoning and pepper.
4Mix gently with fork.
5Pour vegetable stock over potatoes.
6Sprinkle with paprika.
7Bake at 400 degrees on upper shelf.
8Stir every 15 minutes until nicely browned and crisp, about 45 minutes.
9Place under broiler to complete browning
