Ingredients:

| lbs | Ground beef or lamb or both | | 4
| | Green onion, finely chopped | | 1
| cup | Garlic, minced | | 1
| tsp | Oregano | | 1/4
| tsp | Cumin | | 1/4
| tsp | Parsley | | 1
| tsp | Salt | | 1/4
| tsp | Pepper, freshly ground | | 8
| | Lg pita |

Procedures:
| 1 | Mix all ingredients except pita, mixing well and kneading until mixture is stiff. | | 2 | On skewer pack meat mixture about 5" long and not more than 2" in diameter. | | 3 | Put as many "fingers" as possible on a skewer leaving a 1" space in between. | | 4 | Cook over hot coals 10-15 minutes, turning frequently. | | 5 | Take pita and slide gyro into center. | | 6 | Drizzle with sauce. | | 7 | Fold over to eat. | | 8 | Sauce: tzatziki 1 c yogurt, 1 t mayo,juice of 1 lemon, 2 scallions including green tops,(finely chopped), cucumber (minced), 5 cloves garlic (minced). | | 9 | Mix well |
