| 1 | Wash potatoes well, leaving the skin on. |
| 2 | Cut potatoes in half lengthwise. |
| 3 | Place in kettle and fill with water to cover bring to a boil. |
| 4 | Reduce heat and simmer until potatoes are very tender. |
| 5 | Drain all water add butter while potatoes are hot. |
| 6 | Begin to hand mash. |
| 7 | Add horseradish, cream. |
| 8 | Salt and pepper. |
| 9 | Mash well until creamy but slightly lumpy. |
