Oshkinigikwe (tomato stew)

Ingredients:
4 lbsMiniature Mexican tomatoes
-- washed & deseeded
12 eachShallots, chopped
1/3 cupWater
1/3 cupCucumber, minced
1 tspSalt
1/4 tspBlack pepper
1/3 cupCorn flour
Procedures:
1Place tomatoes in a large saucepan, add the shallots & water & simmer for 30 minutes, stirring gently on occasion.
2Add the cucumbers & salt & pepper, simmer for 10 minutes, stirring, until the tomatoes break up.
3Quickly add the corn flour, 1 tablespoon at a time, stirring slowly.
4Simmer for 5 minutes & serve.
