Pan fried brussels sprouts

Ingredients:
2 1/4 lbsBrussels sprouts, washed &
Outer leaves removed
2 ozButter
2 tbspSunflower oil
1 lbsButton onions, peeled
Salt & pepper
Procedures:
1Using a small sharp knife, score a cross in the base of each brussels sprout.
2Cook in a large pan of water for 5 mins.
3Drain and cool.
4Set aside until needed.
5Meanwhile, heat the butter and oil in a large frying pan, then add the onions.
6Cook over a medium heat until they start to turn golden.
7Cut the cooled brussels sprouts into quarters, stir in with the onions and seasoning and cook over a high heat for 8-10 minutes until the sprouts are just tender.
