Ingredients:

| | Medium heads garlic | | 2
| tsp | Olive oil | | 1/2
| tsp | Kosher salt | | | Ground pepper to taste |

Procedures:
| 1 | Smash heads of garlic lights to loosen but not completely separate cloves, Place on large sheet of aluminum foil or in small casserole with lid. | | 2 | Drizzle with oil and season with salt & pepper. | | 3 | Wrap foil into tight packer or cover dish with lid. | | 4 | Roast 1 hour until soft. | | 5 | When cool enough to handle, peel by squeezing each clove at the end so it pops out of the skin. | | 6 | Yields ?cup of mashed garlic. |
