Ingredients:

| each | Red Bell Pepper | | 1 1/2
| cup | Mayonnaise | | 1
| tsp | Dried Parsley, Crushed | | 1
| each | Green Bell Pepper | | 1/2
| cup | Sour Cream | | | GARNISHES | | 1
| x | Fresh Parsley, Chopped, OR | | 1
| x | Paprika | | 1
| tbsp | Fresh Parsley, Chopped, OR | | 1
| x | Dried Parsley, Crushed | | 2
| tbsp | Lemon Juice |

Procedures:
| 1 | Slice the peppers in half, vertically, and remove the seeds. | | 2 | Char under the broiler on both sides (about 5 minutes per side). | | 3 | Remove and cool. | | 4 | Peel and dice the peppers and set aside. | | 5 | Blend the mayonnaise and sour cream until smooth. | | 6 | Mix in the lemon juice and parsley then blend in the peppers. | | 7 | Cover and chill. | | 8 | Garnish with additional parsley and sprinkle with paprika, if desired. | | 9 | Makes about 3 cups of dip. | | 10 | Suggested dippers: deli meats, elephant garlic chips, baby corn, string beans, carrots, bread sticks |
