Dry cure southwest jerky

Ingredients:
1 tspSalt
1 tspPepper
1/2 tspCayenne pepper
3 tbspChili powder
2 tspCumin
2 Cloves garlic minced
2 lbsSteak sliced thinly
Procedures:
1Combine ingredients and thoroughly mix together.
2This is a dry marinade so there is no liquid.
3Sprinkle the spice mixture on the meat slices and work into the grain with your fingers.
4Cover and marinate overnight.
5Place trays in the oven and dry at 145°F.
6For first 4 hrs.
7Then set oven 130°F.
8Until dry.(4 to 8 hrs).
9Jerky should be hard but not brittle.
10Blot up any fat that appears with paper towels.
11*for a chewy texture, slice the meat with the grain, or across the grain for more tender jerky.
12Thats all! it may take a few trys to figure out exactly how long to dry the meat, but you"re still eating while you"re trying so it"s not that bad.
