Ryzi me araka (rice & peas)

Ingredients:
1 tbspOlive oil
1 Onion, finely chopped
1 cupUncooked rice
1 packFrozen peas (16 oz)
-or 2 cups shelled fresh
Salt to taste
Pepper to taste
2 1/2 cupHot water or vegetable broth
Procedures:
1Heat the oil in a medium-size heavy saucepan.
2Saute the onions until tender.
3Add the rice and stir until all grains are well-coated.
4Add peas, salt and pepper (you may want to use less salt if you plan to use vegetable broth), and stir.
5Add hot water or broth, bring to a boil and cook over low heat for 25 minutes.
6Makes four to six servings.
