Ingredients:
| 3
| large | Acorn squash | | | -- halved and seeded | | 1 1/2
| lbs | Pork sausage meat | | 3/4
| cup | Quaker Oats, uncooked | | | -- (quick or old-fashioned) | | 1/2
| tsp | Salt | | 1/2
| cup | Chopped apple | | 1/4
| cup | Chopped onion | | 1
| tbsp | Finely-chopped parsley | | 1/2
| cup | Milk |

Procedures:
| 1 | Place squash, cut side down, in shallow baking pan. | | 2 | Pour a little water in pan. | | 3 | Bake in preheated moderate oven (350°F). | | 4 | About 30 minutes. | | 5 | While squash in baking, make sausage balls. | | 6 | combine sausage, oats, salt, apple, onion, parsley and milk thoroughly. | | 7 | Shape to form 18 sausage balls. | | 8 | Brown lightly in small amount of shortening in large skillet. | | 9 | Remove squash from oven; turn cut side up. | | 10 | Season with salt and pepper. | | 11 | Place 3 sausage balls in center of each squash. | | 12 | Continue to bake about 40 minutes longer or until squash is tender. |
