Sauteed crookneck squash

Ingredients:
2 1/2 lbsCrookneck squash
1/4 cupButter
1 tbspOlive oil
1 Onion, medium, chopped fine
1/2 cupWater chestnuts, finely chop
1 tspSalt
1/2 tspPepper
Procedures:
1Wash and scrape squash.
2Slice thinly into a bowl and set aside.
3In a large skillet, heat butter and olive oil.
4Add onion and saute until limp.
5Add the water chestnuts and continue cooking at low heat until chestnuts appear golden.
6Add sliced squash and seasonings and stir to mix thoroughly with the saute.
7Cover and cook on low heat 15 to 20 minutes, or until squash is tender
