Ingredients:
1 lbsRed potatoes
1 tspOlive oil
1 clGarlic, crushed
1/2 cupDefatted, low-salt chicken
-stock
Salt and freshly ground
-pepper
Procedures:
1Wash and thinly slice potatoes.
2This can be sone in a food processor fitted with a slicing blade.
3Heat oil in a non-stick skillet large enough to hold potatoes in one layer.
4Add garlic and potatoes.
5Lower heat and simmer 20 minutes or until stock is absorbed and potatoes are soft.
6Add salt and pepper to taste.
