Ingredients:
| 2
| lbs | Zucchini | | 2
| tsp | Salt | | 1/2
| small | Onion, finely chopped | | 4
| tbsp | Butter | | | Freshly ground pepper | | 2
| tbsp | Lemon juice | | 3
| tbsp | Parsley, chopped | | | Salt, if needed |

Procedures:
| 1 | Scrub zucchini and cut off ends. | | 2 | Grate and put in colander. | | 3 | Toss with 2 tsp salt and let drain at least ?hour. | | 4 | When ready to cook, drain well in a paper towel to remove all liquid. | | 5 | Melt butter in a large skillet. | | 6 | Saute onion over low heat until soft. | | 7 | Raise heat to medium high and add zucchini. | | 8 | Stir and toss constantly for 3-4 minutes, until cooked but still crisp. | | 9 | Season with pepper, salt if needed, lemon juice and parsley. | | 10 | Serve immediately. |
