Ingredients:

| cup | Grits | | 8
| cup | Water | | 1
| pack | Garlic cheese | | 1/4
| lbs | Butter | | 4
| | Egg yolk | | 4
| | Egg white, beaten | | 1
| tsp | Salt | | | Diced canned or fresh | | | -chiles of choice | | | Cracker or dry bread crumbs |

Procedures:
| 1 | Cook grits, butter, cheese in salted water until done. | | 2 | Add egg yolks. | | 3 | Fold in egg whites. | | 4 | Put in greased casserole. | | 5 | Sprinkle top with crumbs. | | 6 | Bake in 350 degree oven for 45 minutes. | | 7 | One cup of sharp cheese may be used in place of the garlic cheese. |
