Easter cookies

Ingredients:
3/4 cupButter, softened
3/4 cupSugar
3 Egg yolks
4 tspOrange flower water
2 tbspMilk
3/4 cupCurrants
4 cupAll-purpose flour
1 pinchSalt
GLAZE
1 Egg white, lightly beaten
2 tbspSuperfine sugar
Procedures:
1Preheat oven to 350°F (175 c).
2Grease several baking sheets with butter.
3In a large bowl, beat butter with sugar until creamy.
4Beat in egg yolks, orange flower water and milk.
5Add currants.
6Sift flour and salt into bowl; mix in to form a fairly stiff dough.
7Knead lightly on a floured surface until smooth.
8Roll out to 1/8-inch thickness.
9Using a round 2-?inch-fluted cookie cutter, cut out circles from dough; place on prepared baking sheets.
10Knead and roll out trimmings; cut out more circles.
11Continue until dough is used up.
12Bake cookies 10 minutes.
13Remove from oven.
14Brush cookies with beaten egg white; sprinkle lightly with superfine sugar.
15Return to oven for about 5 minutes longer or until lightly browned.
16Remove from baking sheets to wire racks; cool.
17Store in an airtight container.
