Filled sugar cookies

Ingredients:
1 1/2 cupPowdered sugar
1 cupMargarine or butter
-softened
1 tspVanilla
1/2 tspAlmond extract
1 Egg
2 1/2 cupAll-purpose flour*
1 tspBaking soda
1 tspCream of tartar
2 cupRaisins, cut-up dates or
Figs
3/4 cupSugar
1/2 cupChopped nuts, if desired
3/4 cupWater
Granulated sugar
*if using self-rising flour
--- omit
Baking soda and cream of
-tartar.
Procedures:
1Recipe by: betty crocker"s cookbook mix powdered sugar, margarine, vanilla, almond extract and egg.
2Stir in remaining ingredients except granulated sugar.
3Cover and refrigerate at least 2 hours.
4Cook raisins, sugar, nuts and water, stirring constantly, until mixture thickens; cool.
5Roll dough 1/8 inch thick.
6Cut into 24 circles with 2-?inch doughnut cutter that has center removed.
7Replace center and cut out 24 circles with doughnut cutter.
8Place whole circles on lightly greased cookie sheet.
9Top with raisin mixture, spreading almost to edges.
10Top with remaining circles.
11Press edges together with floured fork.
12Sprinkle tops with granulated sugar.
13Bake 8 to 10 minutes or until light brown; cool.
142 dozen cookies; 245 calories per cookie.
