Ingredients:
3/4 cupSugar
1/2 cupVegetable shortening
1 cupMaple syrup
1 tspVanilla extract
2 Eggs
2 cupRegular rolled oats
1 cupAll purpose flour
1/4 cupFlaked sweetened coconut
1 tspBaking powder
1/2 tspSalt
Vegetable cooking spray
Procedures:
1Cream sugar and shortening at medium speed of mixer until light and fluffy (about 5 minutes).
2Add syrup, vanilla, and eggs; beat until well blended.
3Combine oats and next 4 ingredients; stir well.
4Add to creamed mixture, stirring just until dry ingredients are moistened.
5Pour batter into a 13x9 inch baking pan coated with cooking spray.
6Bake at 350 deg for 40 minutes or until a wooden pick inserted in center comes out clean.
7Yield: 2 dozen
