Ingredients:

| cup | Sugar | | 1/2
| cup | Vegetable shortening | | 1
| cup | Maple syrup | | 1
| tsp | Vanilla extract | | 2
| | Eggs | | 2
| cup | Regular rolled oats | | 1
| cup | All purpose flour | | 1/4
| cup | Flaked sweetened coconut | | 1
| tsp | Baking powder | | 1/2
| tsp | Salt | | | Vegetable cooking spray |

Procedures:
| 1 | Cream sugar and shortening at medium speed of mixer until light and fluffy (about 5 minutes). | | 2 | Add syrup, vanilla, and eggs; beat until well blended. | | 3 | Combine oats and next 4 ingredients; stir well. | | 4 | Add to creamed mixture, stirring just until dry ingredients are moistened. | | 5 | Pour batter into a 13x9 inch baking pan coated with cooking spray. | | 6 | Bake at 350 deg for 40 minutes or until a wooden pick inserted in center comes out clean. | | 7 | Yield: 2 dozen |
