Ingredients:

| cup | Butter | | 1/2
| cup | Confectioners sugar | | 2
| cup | All-purpose flour | | 1/2
| tsp | Salt | | 4
| | Eggs, well beaten | | 2
| cup | Granulated sugar | | 5
| tbsp | Lemon juice | | 2
| tbsp | Grated lemon rind | | | Confectioners sugar, topping |

Procedures:
| 1 | A not-too-tart lemon topping over a sweet crust. | | 2 | Preheat oven to 300? | | 3 | In a large bowl, cream together butter and confectioners sugar; then blend in flour and salt. | | 4 | Press mixture down in a flat buttered cookie pan. | | 5 | Bake at 300?for 20 minutes. | | 6 | While crust is baking, in a medium bowl blend together eggs, granulated sugar, lemon juice and rind. | | 7 | Pour over crust. | | 8 | Raise temperature to 350?and bake for an additional 15-20 minutes at 350? | | 9 | Remove from oven and let cool. | | 10 | When cooled, sprinkle with additional confectioners sugar. | | 11 | Cut into rectangles. | | 12 | Yield: 2Louise durman, food editor, the news-sentinel, knoxville, tn randy shearer |
