Ingredients:
1 cupButter
1/2 cupConfectioners sugar
2 cupAll-purpose flour
1/2 tspSalt
4 Eggs, well beaten
2 cupGranulated sugar
5 tbspLemon juice
2 tbspGrated lemon rind
Confectioners sugar, topping
Procedures:
1A not-too-tart lemon topping over a sweet crust.
2Preheat oven to 300?
3In a large bowl, cream together butter and confectioners sugar; then blend in flour and salt.
4Press mixture down in a flat buttered cookie pan.
5Bake at 300?for 20 minutes.
6While crust is baking, in a medium bowl blend together eggs, granulated sugar, lemon juice and rind.
7Pour over crust.
8Raise temperature to 350?and bake for an additional 15-20 minutes at 350?
9Remove from oven and let cool.
10When cooled, sprinkle with additional confectioners sugar.
11Cut into rectangles.
